Potato Soupy

I was at a loss for something to make for dinner tonight, but then I remembered reading Aimee's post about making some potato soup.

That will do.

I threw 3 cans of broth in a pot, cut up 4 red potatoes and 1 big yellow one, threw them in a pot to boil, then simmer for 10 min.

While that was cooking, I cut up some onion and threw that in a Pam-sprayed pan with a package of Oscar Mayer Bacon Bits, a little thyme and a dab of butter and sauteed it for a few minutes.

After my potatoes were soft, I added the onion mixture to it, then some salt and fresh grated pepper. I put in about 3/4 cup of Velveeta cheese (light) and let that melt.

Voila!! Done. And it was fabulous. Filling, too. It made about 7 cups. I'm definitely going to make it again.

Oh, yum! I love potato soup, but I have yet to make one from scratch that I have been truly satisfied with. I shall give this a whirl, perhaps tomorrow.

Ok, dumb question but what kind of broth did you put in?

I used fat-free chicken broth.
