Saint Nicholas | Main | Treasure in the Trash December 6, 2004Rolo CookiesOK, so at the craft fair this weekend, I was told that I absolutely needed to try these cookies with a Rolo baked into it. I tried to resist, but for a buck? I bought a bag. Oh. Man. Were they good. Naturally, I came home, polished off the last of the cookies in the bag and Googled Rolo Cookies. Here's one recipe. There are others, but they are all pretty similar. I'm going to have to pick up some of these come payday/grocery shopping day and try whipping some up.

I actually got the stuff to make these cookies today (for tomorrow, since Friday is free day!) and made them and also made a batch of the cookies with Hershey's kisses in the middle.
I only had one Rolo cookie (I had to test them!), but my goodness was it good! Thanks for linking to the recipe!

They were definitely yummy, but stupid me, I forgot to add the baking soda. so they were denser than they were supposed to be - almost like brownies. I sent the majority of both kinds of cookies to work with Fred. I'm sure if they'd been left at home, I would have eaten nothing but cookies all day! :)
